Ingredients

  • (1 1/2 pounds) Grass-fed Ground Beef
  • (1) Onion, minced
  • (4) Carrots, minced
  • (3) Celery ribs, thinly sliced
  • (1/2 cup) Barley
  • (3 (10 ounce) cans) Beef broth
  • (1 (28 ounce) can) Diced tomatoes
  • (2 cups) Water
  • (1 (10.5 ounce) can) Condensed tomato soup
  • (1) Bay leaf
  • (1 tablespoon) Parsley
  • (1 teaspoon) Minced garlic
  • (1/2 teaspoon) Dried thyme
  • (To taste) Ground black pepper

Directions

  1. Gather and prepare all the ingredients.
  2. Heat a large pot over medium-high heat, add the ground beef, and cook until fully browned with no pink remaining. Drain off any excess fat.
  3. Add the onion, carrots, celery, and barley to the pot. Pour in the beef broth, diced tomatoes, water, and tomato soup. Season with bay leaf, parsley, garlic, thyme, and pepper.
  4. Bring the mixture to a boil, then lower the heat, cover the pot, and let it simmer for about 2 hours, stirring occasionally.
  5. Discard the bay leaf before serving.
  6. Serve the soup hot and enjoy.
